Green Rice with Yellowfin Tuna
Hearty and satisfying, this comforting meal is loaded with tuna and vegetables. It’s the perfect weeknight meal.
Ingredients:
- 1 can Van Camp’s Yellowfin Tuna, oil reserved
- 4 cups cooked rice, warmed
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1 onion, chopped
- 1 large carrot, small dice
- 1 cup canned corn
- 1 large tomato, diced
- Salt and pepper, to taste
Instructions:
- In a blender add a cup of spinach, pinch of salt and pepper and a quarter cup of chicken broth. Blend until smooth.
- Add sauce to the warm rice and stir until combined. Set aside.
- Heat pan on medium high heat, add the oil from the tuna can.
- Add onion, carrot, corn and tomato. Cook for about 2 – 3 minutes.
- Add tuna to the vegetables and gently stir until combined.
- Finally, add the fried vegetables and tuna with the green rice.
