Green Rice with Yellowfin Tuna

Hearty and satisfying, this comforting meal is loaded with tuna and vegetables. It’s the perfect weeknight meal.

Ingredients:

  • 1 can Van Camp’s Yellowfin Tuna, oil reserved
  • 4 cups cooked rice, warmed
  • 1/2 cup chicken broth
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 1 large carrot, small dice
  • 1 cup canned corn
  • 1 large tomato, diced
  • Salt and pepper, to taste

Instructions:

  • In a blender add a cup of spinach, pinch of salt and pepper and a quarter cup of chicken broth. Blend until smooth.
  • Add sauce to the warm rice and stir until combined. Set aside.
  • Heat pan on medium high heat, add the oil from the tuna can.
  • Add onion, carrot, corn and tomato. Cook for about 2 – 3 minutes.
  • Add tuna to the vegetables and gently stir until combined.
  • Finally, add the fried vegetables and tuna with the green rice.
