Valencian Yellowfin Tuna Rice

This family style rice dish is loaded with tuna and vegetables. It’s the perfect meal to satisfy everyone in the family.

Ingredients:

  • 2 cups cooked rice
  • 1 can Van Camp’s Yellowfin Tuna, oil reserved
  • 1 Tablespoon minced garlic
  • 1/2 onion, chopped
  • 1 carrot, chopped
  • 1/2 bell pepper, chopped
  • 1/2 cup canned corn
  • 1/2 cup peas
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt, or to taste
  • Fresh cracked black pepper, to taste
  • 1/2 cup fresh chopped cilantro

Instructions:

  • Heat large skillet to medium high heat. Pour the oil from the can of tuna in the skillet.
  • Add garlic and onions, cook until soft and fragrant.
  • Add carrots, bell pepper, corn and peas. Cook for about 5 minutes or until tender.
  • Add the cooked rice and stir until combined with the vegetables.
  • Season with paprika, salt and pepper.
  • Gently fold tuna into the rice mixture and cook until tuna is warm.
  • Garnish with cilantro.
