Wahoo Open Faced Sandwich

Enjoy the mild flavor of wahoo in this amazing sandwich. Layered with avocado and so many delicious ingredients, it’s sure to be a lunch favorite.

Ingredients:

  • 1 can Van Camp’s Wahoo, drained
  • 1 Tablespoon mayonnaise, plus extra for spreading
  • 3 green onions, thinly sliced, plus additional for garnish
  • 1/2 red bell pepper, chopped
  • 1/2 teaspoon balsamic vinegar
  • black pepper, to taste
  • 1 pinch garlic salt, or to taste
  • 2 slices of bread, your choice
  • 4 lettuce leaves
  • 1 medium tomato, sliced
  • 2 ripe avocados, halved and pitted
  • Microgreens, for garnish

Instructions:

  • Stir together wahoo, mayonnaise, green onions, red pepper, and balsamic vinegar in a bowl. Season with pepper and garlic salt.
  • Spread mayo on bread, then top with lettuce, tomato and avocado slices. Layer the wahoo mixture on top.
  • Garnish with micro-greens.
